13 Easy Cookie Recipes For When You're Broke by Juliette Page

1 cup melted butter

1 cup granulated sugar

1 3/4 cups of all purpose flour

1 tsp. vanilla extract

Mix the butter, vanilla extract, and sugar together. Make sure these ingredients are well blended before adding the flour. Add flour to the mixture, slowly. Make sure the flour is well sifted beforehand. Once the dough begins to stiffen, stop adding flour. (You should have at least 1/2 a cup of flour left.) Use the remaining flour on the cookie cutting surface. Roll the cookie dough out thin. Make sure the sugar cookies are nice and flat, or about 1/2 inch thick. Use cookie cutters to cut the shapes you desire. Place on a baking sheet. (The baking sheet should not be greased, because of the amount of butter used in the cookies.) Preheat the oven to 325 degrees. Cook the cookies for 10-15 minutes, or until they start to firm up. Remove from the oven.

Coconut-Banana Cookies

3/4 cup coconut, shredded

1 banana

Preheat the oven to 350F. Grease a cookie sheet, set aside. Pulse the two ingredients for a few moments in a food processor until very well combined. Shape into discs, then set on the greased cookie sheet and bake in the preheated oven for 25 minutes or until golden.
